Fennel (Foeniculum vulgare Miller) is dried ripe fruit of aromatic and herbaceous plant. It is well known as "SUANF". Fennel seeds have a fragrant odour and a pleasant aromatic taste. Fennel seeds yield oil of which the main constituent is Anethole. India is the largest producer and exporter of Fennel in the world.

APPLICATIONS / USAGES :

Fennel Seeds : Fennel seeds are used in the food and flavour industry for addition to meats, vegetable products, fish sauces, soups, salad, dressings, stews, breads, pastries, tea and alcoholic beverages. Crushed seeds are used as a substitute for juniper in flavouring gin. It is also used in Liquors and Perfumery Industries. Fennel is used in cookery and confections.

Fennel Oil : The Essential Oil of fennel is used in condiments, soaps, creams, perfumes and liqueurs and in toilet articles. Due to its aromatic and distinctive flavour, it is generally used in a boiled vegetable. Powdered fennel goes into biscuits, cakes and cooked apple dishes. The oil is used as a flavoring agent also.

Usage in Medicines: Fennel is widely used in medicines and it also finds a place in the pharmacopoeia of all countries on account of its stimulant, carminative and other properties.

Fennel Seeds have been used as an antispasmodic, diuretic, expectorants, laxative, and stomachic. Fennel has also been used to stimulate lactation, as a remedy against colic and it also improves the taste of other medicines.
