The Nutmeg tree, Myristica fragans, is truly remarkable in that it produces two different spices, nutmeg and mace. It is a handsome, densely foliaged evergreen tree of the nutmeg family, with spreading branches, dark gray bark, and small , pale yellow, bell shaped flowers. Under cultivation it grows to a height of 40 to 60 feet and thrives at low elevations, in the warm and rainy tropics of both hemispheres.
The fleshy fruit, resembling an apricot, is globose in form, lemon yellow to light brown in colour. When ripe it splits in half, exposing the beautiful brilliant scarlet, netlike membrane, or aril, know as the mace, which closely enwraps a lustrous dark brown, brittle shell, inside of which is the single glossy brown, oilseed the nutmeg of commerce.

The nutmeg tree is a large evergreen native to the Moluccas (the Spice Islands) and is now cultivated in the West Indies. It produces two spices - mace and nutmeg. Nutmeg is the seed kernel inside the fruit and mace is the lacy covering (aril) on the kernel.

Cultivation Zone: Indonesia and Grenada are the world's largest producers of high quality Nutmeg and Mace. Singapore and Netherlands are one of the largest exporting countries of the spice.

Uses of Nutmeg
Culinary Use: Nutmeg is extensively used in food processing industry. It is also used to flavor numerous products such as sauces, cakes, cookies, confectionery, candies etc. In India, nutmeg is known as jaipal and is almost exclusively used in sweets. It is also used in small quantities in garam masala. In other European cuisine, nutmeg is used in potato dishes and in processed meat products; they are also used in soups, sauces and baked goods. Japanese include nutmeg to produce a variety of curry powder as an ingredient. Nutmeg is also a traditional ingredient in mulled cider, mulled wine and eggnog.

Medicinal Use : Nutmeg is effective for reducing aiding digestion, improving the appetite, flatulence and treating diarrhea, vomiting and nausea when used in medicinal preparations.

Essential Oils : Nutmeg is also popularly used extensively in pharmaceutical, for manufacturing essential oil and perfumery industry. It is also one of the major ingredients in cough syrups and in toothpaste.

Beverage Industry : Nutmeg oil is also used for flavoring aerated drinks and syrups used to make other soft drinks.
