Vanilla, Vanilla planifolia, formely known by the rather appropriate name V. fragrans (Salisb.) Ames, is a large green-stemmed creeping or climbing perennial plant of the orchid family.
The popular flavoring material is obtained from the dried, cured, full-sized but not fully ripe pods. The pods have no flavor when picked, for the fragrant aroma develops during the curing process. Most of the fragrance resides in the seeds and the oily liquid surrounding the seeds.
The generic name Vanilla is derived from the Spanish vainilla, a diminutive of vaina, a pod; its specific epithet, planifolia, refers to the broad, flat leaf of the plant.

Next to saffron and cardamom. The main species harvested for vanillin is Vanilla planifolia. It is a native of Mexico, though it is now widely grown throughout the tropics. It's flavor is rich, full, aromatic and powerful.

Cultivation Zone: Vanilla is native to Mexico but Madagascar is the largest producer. Other major producers of Vanilla are China , India , Indonesia , Japan and Papua New Guinea.

Uses of Vanilla
Culinary Use: Vanilla can be used in three forms: whole bean, powder and extract. It is an essential for flavoring. Vanilla flavor in creams, cakes and other foodstuff may be achieved by adding some vanilla essence or by cooking vanilla beans in the liquid preparation. Its mellow fragrance adds variety and flavor to various sweet dishes: cakes, creams, puddings, custards, soufflés and, of course, ice cream. Classic examples include crème caramel, peach Melba and apple Charlotte. Vanilla flavor is detectable in many chocolate and confectionery items and several liqueurs such as Crème de Cacao and Galliano.

Medicinal Use: Vanilla is considered an aphrodisiac. It was also once believed that vanilla was a febrifuge, used to reduce fevers, though it is rarely used for any medicinal purposes other than as a pharmaceutical flavoring. Long ago vanilla was also used in folk medicine.
